Because of how close these two grates sit, we didn’t think the lower one was designed for the coals (it actually is). Engineered to give backyard chefs the ultimate control, the Kettleman charcoal grill does more with less charcoal. It’s a kettle-style barbecue, looking similar to the Weber and Landmann models that I’ve tested (reviews upcoming), but it actually has a number of key differences.

A common misconception is that the temperature gauge in the lid of your grill is reading the cooking temperature. Partially close the damper to starve the fire of oxygen and cool off the grill--open the vent back if you notice the temperature drops too low. li>Exhaust Damper The exhaust damper will be on the smokestack of barrel-style charcoal grills or on the lid of non-barrel charcoal grills.

However, if it’s too cool your food will really stick, so make sure it’s up to heat before you start cooking. Our spatchcocked chicken was brilliant: succulent meat, with crisp, barbecued skin and a subtle smoky flavour.
