Bean threads require a particular preparation style that you’re probably not used to with your average noodles. Bean thread noodles, also named as mung bean noodles, cellophane noodles or bean vermicelli is a popular non-flour noodle in Chinese cuisine. Stir fry glass noodles (mung bean vermicelli) is a comforting dish that's filled with springy, chewy noodles, slightly crunchy veggies, and (usually) a delicious fast-cooking protein.
These vegetable stir fry mung bean noodles is one of my go-to dishes when I have less than 30 minutes to whip up a meal.
In Thailand, they are made from mung bean starch, (which is what we're using today), but Korean glass noodles are made from sweet potato starch. Compared with ants climbing a tree, today’s salad is much easier and lighter, with low calories and a mild taste.They are traditionally served during the hot summer months as they have a cooling effect, but they can be enjoyed year-round served hot or chilled. In French Polynesia, cellophane noodles are known as vermicelle de soja and was introduced to the islands by Hakka agricultural workers during the 19th-century. Though commonly found in Chinese cuisine in stir fries hot pot meals, and even in shark's fin soup, these noodles can also be found as an ice cream topping in India, and in Thai cuisine in a spicy and sour seafood salad. I was intrigued because these are cubes of jelly made from mung bean starch just like glass noodles. I loooove this Microplane extra coarse grater (pic below) which worked perfectly and yielded the perfect size noodle.
