Flour - Plain flour (all-purpose) flour is best. Make sure to sift it before, as this helps produce a lump-free choux dough. Although Christmas is still a good few months away, it seems many major UK supermarkets are already getting into the festive spirit. Butter - I prefer unsalted butter as you can control the amount of salt added. If you use salted butter, omit the extra salt in the recipe. You can also use brown butter too for an additional nuttier flavour.
