Pinot Noir represents 60% of the House's vineyards and defines the House style: complex and powerful with remarkable structure. Age is shown through cooked apples, nuts and dried peaches which are kept fresh by pear and high acidity.
On the palate: A subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut. Nearly two hundred years later, Bollinger are one of the biggest names in the region and are famously the preferred champagne brand of fictional British Secret Service agent, James Bond.They were the first Champagne House to be awarded a Royal Warrant in 1884, by the Court of England, which it has held ever since. The most significant period of its history was from 1941 to 1977, the tenure of Madame“Lilly” Bollinger, who expanded production significantly and was ahead of her time in travelling the world to promote the brand.
Bollinger is also allowed to age in cellar, on the lees, for a minimum of 36 months, (twice the legal minimum) before disgorgement, allowing these lees-y, brioche flavours to develop and gain balance. The House owns an impressive 178 hectares of vineyards, of which 85% are Grand Cru and Premier Cru vines. Look out for that lot code, as this is a particularly stunning rendition of Bollinger, almost certainly improved with the bottling in magnum.
In the making of this champagne, reserve wines aged in magnum bottles in the private Bollinger cellar are used that only make up 10% of the cuvée – this fact makes this cuvée very special. Bollinger is famous for the quiet majesty and power of its very handsome, pinot-driven, non-vintage blend. The house style of Bollinger is one of the most distinctive - fresh yet with a yeasty richness and full-bodied. There is both good volume and intensity to the delicious and solidly complex middle-weight flavours that are supported by a firm and moderately exuberant mousse that carries over to the nicely dry but not really austere finale. I don't drink Champagne/Prosecco/Cava/Bubbly/whatever to try to be 'posh' or 'snobby', I really do enjoy drinking and enjoying it and like most things, I have my favourites!
