As one of the longest-standing breweries of the region, the Akashi Sake Brewery stands proudly on the shore of Akashi City in Hyogo prefecture, one of Japan’s most renowned sake producing regions. Our Brewery has been in Akashi on the shore of Osaka Bay since we started over 150 years ago. The straits of Akashi are famous for the fierce currents and whirlpools that form as the tides rip through, which makes life difficult for the fish that live here. But that difficulty rewards the hardy, and makes the fish strong. The best Sea Bream is the one that strives the most and fights the hardest. Like the region’s symbolic “Tai” (meaning sea bream in Japanese) that navigates the arduous straits of Akashi’s coast, our family-run brewery has survived against the fierce currents of time and change since 1856. Embodying this spirit, we persist in our commitment to producing exceptional sakes, created from local ingredients. Akashi-Tai Tokubetsu Junmai is a traditional brew with a satisfyingly full bodied flavour profile, clean and well structured. Akashi Sake Brewery pride themselves on maintaining a traditional handcrafted approach to creating the finest Japanese sake. Brewing superior sake by hand requires all five senses to perfect with the natural processes of fermentation and flavour development. Even the hushed sounds of natural fermentation at work can be heard in the cool, quiet rooms of their brewery.

Akashi-Tai Shiraume Umeshu (50cl) Liqueur | Master of Malt

This plum liqueur by Akashi-Tai is different to our other recommendations as it’s combined with ginjo sake, made from premium Yamada Nishiki rice. This gives it a much softer and richer taste than other wines, rather than the sharp tang that you’d typically expect in a glass of umeshu. This elegant umeshu by Kagura Shuzo is made from carefully selected top quality ume fruits, giving it a delicate yet delicious flavour. An undiluted sake from Akashi-Tai, fuller in body and with a more concentrated flavour. This is the drink the brew-masters reach for at the end of a working day. Sake is made from rice. Essentially rice is milled, soaked, steamed, fermented with a mould fungus called “koji”, filtered, water added and then bottled. Milling ( Seimai-Buai) removes proteins, fats, minerals and vitamins from the rice grains leaving only the white starch heart. Removing more of the outer of the rice by more thorough milling results in fewer congeners, therefore producing a cleaner brew and a finer, more elegant sake. Depending on the type of sake, distiller’s alcohol (grain alcohol) can sometimes also be added to the fermenting sake mash which adds vibrancy and to the aromas and flavours. As others of his lineage have done so before him, Toji (Sake Master) Kimio Yonezawa, has devoted most of his life to overseeing each stage of the brewing process himself. From selecting the very best Gohyakumangoku and Yamadanishiki rice varietals to watching over the fermentation process in the night, he brings out the incredible character at the heart of his humble ingredients; the work of a true craftsman. Akashi-Tai Shiraume Ginjo Umeshu Liqueur - The Whisky Exchange

This luxury umeshu by Ozeki contains nanko ume, one of the highest grade ume fruits. As this type of ume is slowly ripened on the tree, it has a mellow and naturally sweet flavour. This bottle also contains whole fruits, which you can eat after you’ve finished drinking. A voluptuous bouquet of confit cherries and plums is followed by a sweetness in the mouth, with generous notes of plum and almond. Shiraume Ginjo Umeshu gives a fresh, lingering finish.

This fine rice is polished until only 38% of the grain remains, after which two full months are devoted to nurturing our Junmai Daiginjo Genshu sake to completion. Well pronounced nose with melon, lemon, bitter orange, green grass and sage. Very nice balance of minerals, lemon and bitter orange flavours to give a long lasting finish without ever overpowering. It is made using high quality rice – 100% Gohyakumangoku rice from the Hyogo prefecture. The term Genshu denotes that this is an undiluted sake, hence the higher alcohol of 19% ABV. Our Tokubetsu Junmai begins with 100% Yamadanishiki rice grown in Hyogo Prefecture which is polished until only 60% of the grain is left. This sake is lovingly handcrafted in every step of the process, from making Koji Rice to hand bottling.
